🧇 Fluffy Waffle-Cone Style Waffles

Ingredients

  • 2 1/4 cups sifted cake flour
  • 1/3 cup granulated sugar
  • 2 tablespoons brown sugar (optional but recommended)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3 large eggs, separated
  • 1 1/2 cups whole milk
  • 1/2 cup unsalted butter, melted (plus extra for waffle iron)
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon almond extract
  • Tiny pinch cinnamon (optional)

Directions

  1. Preheat your waffle iron.
  2. In a large bowl, sift together flour, granulated sugar, brown sugar, baking powder, salt, and cinnamon.
  3. In a second bowl, whisk together egg yolks, milk, melted butter, vanilla, and almond extract.
  4. Pour the wet ingredients into the dry ingredients and whisk until just combined. Do not overmix.
  5. In a separate clean bowl, beat the egg whites until soft peaks form (about 2–3 minutes).
  6. Gently fold the egg whites into the batter until just incorporated. The batter should look light and fluffy.
  7. Lightly butter your waffle iron. Pour about 3/4 cup batter (or according to your waffle maker size) onto the hot iron.
  8. Cook until deep golden brown — slightly darker than you think. That’s where the caramelized sugar gives you the waffle-cone smell.
  9. Serve immediately with butter and warm syrup.
