
Ingredients
- 2 1/4 cups sifted cake flour
- 1/3 cup granulated sugar
- 2 tablespoons brown sugar (optional but recommended)
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 3 large eggs, separated
- 1 1/2 cups whole milk
- 1/2 cup unsalted butter, melted (plus extra for waffle iron)
- 2 teaspoons vanilla extract
- 1/4 teaspoon almond extract
- Tiny pinch cinnamon (optional)
Directions
- Preheat your waffle iron.
- In a large bowl, sift together flour, granulated sugar, brown sugar, baking powder, salt, and cinnamon.
- In a second bowl, whisk together egg yolks, milk, melted butter, vanilla, and almond extract.
- Pour the wet ingredients into the dry ingredients and whisk until just combined. Do not overmix.
- In a separate clean bowl, beat the egg whites until soft peaks form (about 2–3 minutes).
- Gently fold the egg whites into the batter until just incorporated. The batter should look light and fluffy.
- Lightly butter your waffle iron. Pour about 3/4 cup batter (or according to your waffle maker size) onto the hot iron.
- Cook until deep golden brown — slightly darker than you think. That’s where the caramelized sugar gives you the waffle-cone smell.
- Serve immediately with butter and warm syrup.
